Areas of Study Especially developed to offer a holistic approach to Sustainable Food Management, this course encompasses aspects of the Food Supply Chain from on-farm production, through food science, technology and processing, to marketing, retail and regulation. Course Aims Much of the recent publicity surrounding the source of the food on our plates has been directed towards the perception of the welfare of farm livestock. This pathway will appeal to those interested in animal production or conservation. A graduate with knowledge of livestock production married with an understanding of the food industry as a whole will therefore be in high demand. Graduates of this course will have a developed knowledge of the 'farm to fork' supply chain within the food industry and be conversant with aspects of food production with regard to nutrition, politics and law, preservation and processing, packaging, quality, composition and analysis, hygiene, health and safety, cultural awareness, marketing, distribution, environmental impact and retailing. Course Content The Farm Livestock Production pathway will allow the student to develop an understanding of managing livestock units in the context of market demand and the supply chain. Subjects covered include all aspects of profitable production of the species, breeds, feeding, production systems, behaviour, health, nutrition, welfare and markets. The core syllabus has been designed to provide the student with a comprehensive awareness of the principles and concepts of food supply chain management. Students will explore the social, ethical, political and cultural influences on the production, processing, marketing and retailing of food whilst gaining an understanding of the concept of sustainability and how it applies to the food supply chain. Core modules studied include Primary Food Production Systems, Food Science and Technology, Sustainable Food Chains, Food and Culture, Food Marketing and Retailing, and Food Regulation and Politics. Students will also undertake a research dissertation exploring a particular issue in greater depth. Special Features The course will utilise the well established livestock units on the College farm covering most UK species of farm livestock production - milk, beef, sheep, pig and some chicken production. Students will undertake a European study tour taking in a variety of production, marketing and retail visits. Career Prospects Due to the holistic nature of the core syllabus, students will be equipped to enter the food industry in a wide range of careers. Predicted roles after graduation include primary food production with particular reference to production of farm livestock, food processing, new product development, supply chain, technical and quality assurance and food retailers.
